Lay the pepperoni slices flat in a single layer on the prepared sheet, leaving a small gap between each one. Crowding them will cause steaming rather than crisping.

Bake for 8 to 10 minutes until the edges curl up, the slices sizzle, and the color deepens to a rich red.

Remove from the oven and press each chip lightly with a folded paper towel to absorb the excess rendered fat. Do not skip this step or the chips will stay soft.

Sprinkle a pinch of mozzarella and parmesan on each chip. Dust with Italian seasoning, garlic powder, and red pepper flakes if using.

Return the tray to the oven for 2 to 3 minutes until the cheese is fully melted and the edges turn golden. Watch closely since they can go from golden to burnt quickly.
