Cheesy Garlic Stuffed Chicken (Print Version)

# Ingredients:

→ Stuffing

01 - 1 pound cremini mushrooms, finely chopped
02 - 2 cloves garlic, minced
03 - 1/4 cup butter
04 - 1/2 cup grated Parmesan cheese
05 - 1/4 cup chopped fresh parsley
06 - Salt and pepper to taste

→ Chicken

07 - 4 boneless, skinless chicken breasts
08 - 1/4 cup butter, melted
09 - 1/4 cup grated Parmesan cheese
10 - Salt and pepper to taste

# Instructions:

01 - In a large skillet, melt butter over medium heat. Add minced garlic and cook for 30 seconds until fragrant. Add the chopped cremini mushrooms and cook for 10-15 minutes, or until softened and browned. Stir in Parmesan cheese, chopped parsley, salt, and pepper. Set aside to cool.
02 - Pound the chicken breasts to an even thickness if necessary. Cut a slit lengthwise in each chicken breast, creating a pocket. Fill the pockets with the mushroom stuffing. Secure the openings with toothpicks.
03 - In a large skillet, melt butter over medium-high heat. Season the stuffed chicken breasts with salt and pepper. Place the chicken breasts in the skillet and cook for 5-7 minutes per side, or until cooked through. Sprinkle the cooked chicken breasts with Parmesan cheese.
04 - Serve the stuffed chicken breasts immediately with your favorite sides, such as roasted vegetables or mashed potatoes.
