Preheat oven to 200°C. Line a baking sheet with parchment paper.

In a large mixing bowl, combine cauliflower florets with olive oil, minced garlic, Italian seasoning, salt, and black pepper. Toss to coat evenly.

Spread seasoned cauliflower in a single layer on the prepared baking sheet. Roast for 20–25 minutes, stirring once halfway, until tender and lightly browned.

Remove from oven. Distribute grated Parmesan cheese and shredded mozzarella evenly over the roasted cauliflower. Return to oven and bake for 5–7 minutes, or until cheese is fully melted and bubbly.

Remove from oven and sprinkle with chopped fresh parsley before serving.
