Cheesy Garlic Butter Mushroom Stuffed Chicken (Print Version)

Stuffed chicken with mushrooms, mozzarella, and garlic butter, baked to perfection.

01 - 4 boneless, skinless chicken breasts
02 - 1 cup mushrooms, finely chopped
03 - 1/2 cup cream cheese, softened
04 - 1/2 cup shredded mozzarella cheese
05 - 3 tablespoons butter
06 - 3 cloves garlic, minced
07 - 1 teaspoon dried thyme
08 - 1 teaspoon dried parsley
09 - Salt and pepper to taste
10 - 1/4 cup grated Parmesan cheese
11 - Fresh parsley, for garnish

# Instructions:

01 - Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
02 - Cut a pocket into each chicken breast without cutting all the way through. In a bowl, mix together the mushrooms, cream cheese, mozzarella cheese, garlic, thyme, parsley, salt, and pepper. Stuff each chicken breast with the mushroom mixture.
03 - In a skillet, melt the butter over medium heat. Sear the stuffed chicken breasts for 3-4 minutes on each side until golden brown.
04 - Transfer the seared chicken breasts to the prepared baking sheet. Sprinkle grated Parmesan cheese over the top of each chicken breast. Bake in the preheated oven for 20-25 minutes until the chicken is cooked through and the cheese is melted.
05 - Garnish with fresh parsley before serving.
