Pulse the Doritos in a food processor until finely crushed with a few small crunchy bits. Transfer to a shallow bowl.

In one shallow bowl, whisk flour, garlic powder, paprika, and black pepper. In a second bowl, whisk eggs with milk until smooth.

Dip each mozzarella piece in the flour mixture, then egg, then crushed Doritos. Press crumbs onto all sides and both ends.

Dip each coated stick back into the egg and Doritos crumbs a second time. Place on a parchment-lined tray without touching.

Freeze the coated mozzarella sticks for at least 45 minutes, or until hard. For longer storage, freeze solid and move to a freezer bag.

Pour oil into a heavy skillet or Dutch oven to about 1 inch deep. Heat to 350 degrees F over medium heat.

Fry 4-5 frozen sticks at a time for 1-2 minutes, turning once, until crisp and orange-golden. Drain briefly and serve hot with warm marinara and parsley if using.
