Cheesy Doritos Encrusted Mozzarella Sticks (Print version)

Mozzarella sticks coated in crushed nacho cheese Doritos, fried until crisp outside and gooey inside, with marinara for dipping.

# Ingredients:

For the coating

01 - 1 bag (9.25 to 9.75 oz / 262 to 276 g) nacho cheese Doritos
02 - 1/2 cup (65 g) all-purpose flour
03 - 1/2 teaspoon garlic powder
04 - 1/2 teaspoon smoked paprika
05 - 1/4 teaspoon black pepper
06 - 2 large eggs
07 - 2 tablespoons milk

For the mozzarella sticks

08 - 12 low-moisture mozzarella string cheese sticks, halved crosswise
09 - Vegetable oil, for frying, about 3 cups depending on pan
10 - 1 cup (240 ml) marinara sauce, warmed
11 - 1 tablespoon chopped parsley, optional for serving

# Instructions:

01 - Pulse the Doritos in a food processor until finely crushed with a few small crunchy bits. Transfer to a shallow bowl.
02 - In one shallow bowl, whisk flour, garlic powder, paprika, and black pepper. In a second bowl, whisk eggs with milk until smooth.
03 - Dip each mozzarella piece in the flour mixture, then egg, then crushed Doritos. Press crumbs onto all sides and both ends.
04 - Dip each coated stick back into the egg and Doritos crumbs a second time. Place on a parchment-lined tray without touching.
05 - Freeze the coated mozzarella sticks for at least 45 minutes, or until hard. For longer storage, freeze solid and move to a freezer bag.
06 - Pour oil into a heavy skillet or Dutch oven to about 1 inch deep. Heat to 350 degrees F over medium heat.
07 - Fry 4-5 frozen sticks at a time for 1-2 minutes, turning once, until crisp and orange-golden. Drain briefly and serve hot with warm marinara and parsley if using.

02 - Freeze the coated sticks before frying to reduce cheese leaks.
