Heat oven to 400°F/200°C. Line large baking sheet with paper.

Slice cauliflower into 6 steaks, about 3/4 inch thick.

Scatter parmesan on baking sheet, place cauliflower on top.

Mix oil, salt, pepper and onion powder. Brush over cauliflower.

Bake 20 minutes until tender.

Top with gruyere, bake 10-15 minutes until bubbly.

Sprinkle with chives and serve.
