Crispy BBQ Chicken Cheddar Wraps (Print version)

Saucy BBQ chicken and sharp cheddar folded into tortillas, then toasted until crisp and melty in a skillet.

# Ingredients:

For the filling

01 - 2 cups (280 g) cooked shredded chicken
02 - 1/2 cup (120 ml) thick barbecue sauce, plus more for dipping
03 - 2 cups (225 g) shredded sharp cheddar cheese
04 - 1/4 cup (35 g) finely chopped red onion
05 - 1/4 cup (10 g) chopped fresh cilantro
06 - 1/2 teaspoon smoked paprika, optional
07 - Salt and black pepper, to taste

For the wraps

08 - 4 large flour tortillas, 10-inch size
09 - 2 tablespoons neutral oil, such as canola or avocado oil

# Instructions:

01 - In a medium bowl, stir together the chicken, barbecue sauce, cheddar, red onion, cilantro, smoked paprika, salt, and pepper. The mixture should be coated but not soupy.
02 - Warm the tortillas for 10-15 seconds in the microwave or in a dry skillet so they fold without cracking.
03 - Place about 1/2 cup of filling on the lower third of each tortilla. Fold in the sides, then roll tightly into a burrito shape.
04 - Heat the oil in a large skillet over medium to medium-high heat. Add the wraps seam-side down and cook for 1-2 minutes, until the seam is sealed and golden.
05 - Turn the wraps every 1-2 minutes until golden and crisp on all sides and the cheese is melted, about 5-6 minutes total. Rest for 1 minute, then slice and serve with extra BBQ sauce.
