Effortless Cheesy Beef Enchirito (Print Version)

Loads of cheese and sauce on beefy, beany enchiritos. Top with your favorites, pop them in the oven, and you've got a family comfort meal.

# Ingredients:

→ Filling

01 - 60 ml water
02 - 1 packet taco seasoning (about 28 g)
03 - 430 g canned refried beans
04 - 450 g ground beef

→ Assembly

05 - 60 g shredded Monterey Jack cheese
06 - 170 g shredded cheddar cheese
07 - 285 g canned red enchilada sauce
08 - 6 large flour tortillas

→ Optional Toppings

09 - Sour cream
10 - Sliced black olives
11 - Chopped onions

# Instructions:

01 - Top each with more sauce if you want. Add onions, olives, and a scoop of sour cream to finish.
02 - Put the dish uncovered in your oven. Bake 20 to 25 minutes. You want it all hot and the cheese gooey and melted.
03 - Drizzle red enchilada sauce over the burritos. Scatter Monterey Jack and cheddar cheese over everything.
04 - Spread the beef and bean mix down the center of each tortilla. Roll them up like burritos and nestle seam-side down in your baking dish.
05 - Mix in the taco seasoning and water with your cooked beef. Let that bubble on low for a couple minutes, then stir in the beans until it's all heated up.
06 - Crumble the ground beef in a skillet on medium. Cook until it's no longer pink, then pour off the extra grease.
07 - Flip your oven on to 190°C so it's good and hot when you're ready.

# Notes:

01 - Once they're done, let enchiritos chill in the pan for a few minutes before serving. That way the bottoms stay a bit firmer.
