Preheat the oven to 175°C (350°F).

In a large bowl, combine the ground beef, bread crumbs, minced onion, beaten eggs, salt, and ground black pepper. Mix well to combine evenly.

On a piece of wax paper, pat out the meat mixture into a 35x45 cm (14x18 inch) rectangle.

Spread the shredded Cheddar cheese evenly over the meat rectangle, leaving a 2 cm (3/4 inch) border around the edges.

Roll up the meat mixture jelly-roll style to enclose the cheese and form a pinwheel loaf. Press in the ends of the loaf to seal the filling.

Transfer the meatloaf to a 25x38 cm (10x15 inch) baking dish.

Bake in the preheated oven for approximately 1 hour, or until the internal temperature reaches at least 70°C (160°F) when checked with an instant-read thermometer.
