Carrot Apple Salad (Print Version)

# Ingredients:

→ Fruits & Vegetables

01 - 1 red delicious apple
02 - 1 granny smith apple
03 - 2 cups matchstick carrots (precut bags available at grocery stores)
04 - 1/4 cup yellow onion, finely diced
05 - 1 cup canned mandarin segments, drained

→ Dressing & Seasonings

06 - 2 tablespoons lemon juice
07 - 1/2 cup vanilla yogurt
08 - 1/4 cup mayo
09 - 1 tablespoon sugar
10 - 1/4 teaspoon salt
11 - 1/4 teaspoon pepper

→ Mix-ins

12 - 1/3 cup dried sweetened cranberries

# Instructions:

01 - Cut both apples matchstick style and place the pieces in a bowl. Pour the lemon juice over the apple pieces and toss well to coat. Set aside for 5 minutes to prevent browning.
02 - Pour the matchstick carrots into a large mixing bowl. Add the diced onion and sweetened dried cranberries.
03 - Once the apples have sat for at least 5 minutes, add them to the mixing bowl. Add the vanilla yogurt, mayo, sugar, salt and pepper to the bowl.
04 - Stir all of the ingredients together well. Add the mandarins to the bowl and gently stir them into the salad.
05 - Cover the bowl and refrigerate for at least three hours. Serve and enjoy!
