Carolina Gold Sauce (Print version)

Tangy, golden mustard BBQ sauce with cider vinegar, honey, brown sugar, and gentle heat.

# Ingredients:

For the sauce

01 - 1 cup (240 g) prepared yellow mustard
02 - 1/2 cup (120 ml) apple cider vinegar
03 - 1/3 cup (110 g) honey
04 - 1/4 cup (50 g) packed light brown sugar
05 - 2 teaspoons gluten-free Worcestershire sauce
06 - 1 teaspoon smoked paprika
07 - 1 teaspoon garlic powder
08 - 1/2 teaspoon onion powder
09 - 1/4 teaspoon cayenne pepper, plus more to taste
10 - 1/4 teaspoon black pepper
11 - 1/2 teaspoon kosher salt, plus more to taste

# Instructions:

01 - Add the mustard, apple cider vinegar, honey, brown sugar, Worcestershire sauce, smoked paprika, garlic powder, onion powder, cayenne, black pepper, and salt to a small saucepan.
02 - Set the pan over medium heat and whisk until the sauce is smooth and the sugar begins to dissolve, about 2 minutes.
03 - Reduce the heat to low and simmer for 8-10 minutes, stirring often, until the sauce smells mellow and lightly smoky. Do not let it boil hard.
04 - Taste while warm. Add a pinch more salt for depth, more vinegar for tang, or a little extra honey if the mustard tastes too sharp.
05 - Let the sauce cool for 15 minutes, then transfer it to a clean jar. Refrigerate until cold before using as a dip, glaze, or barbecue sauce.

# Good to know:

01 - Makes about 2 cups of sauce.
02 - Best after chilling for at least 1 hour.
03 - Use as a finishing glaze during the last 5-10 minutes of grilling.
