# Ingredients:

01 - 2 large sweet potatoes, peeled and cut into 2.5 cm cubes

→ Oils and Syrups

02 - 2 tablespoons olive oil
03 - 2 tablespoons pure maple syrup
04 - 1 tablespoon pure maple syrup, for drizzling

→ Spices and Seasonings

05 - 0.5 teaspoon smoked paprika (optional)
06 - Salt, to taste
07 - Freshly ground black pepper, to taste

→ Cheese and Nuts

08 - 125 grams crumbled feta cheese
09 - 30 grams walnuts, toasted and roughly chopped

# Instructions:

01 - Preheat the oven to 200°C and line a baking sheet with parchment paper.
02 - Combine sweet potato cubes with olive oil, 2 tablespoons maple syrup, smoked paprika (if using), salt, and pepper in a large bowl. Toss thoroughly to coat.
03 - Spread the seasoned sweet potatoes evenly on the prepared baking sheet.
04 - Roast for 25 to 30 minutes, turning the cubes halfway through, until caramelized and tender.
05 - Transfer the roasted sweet potatoes to a serving platter. Top with crumbled feta and toasted walnuts, then drizzle with the remaining maple syrup. Serve warm.
