Melt caramel bits and heavy cream in a medium saucepan over low heat, stirring constantly until smooth.

Remove from heat, add marshmallows and stir until fully coated.

Pour caramel-marshmallow mixture over Rice Krispies in large bowl. Fold gently until evenly combined.

Let mixture cool slightly. With greased hands, roll into 1-inch balls and place on wax or parchment paper.

Roll balls in crushed graham crackers and optional chocolate chips. Let cool completely before serving.
