# Ingredients:

For the zucchini and oil

01 - 3 medium zucchini (about 1.5 lbs / 680 g), ends trimmed
02 - 3 tablespoons extra-virgin olive oil
03 - 2 cloves garlic, minced
04 - 3/4 teaspoon kosher salt
05 - 1/4 teaspoon black pepper
06 - 1 teaspoon dried Italian seasoning (or dried thyme)
07 - 1 tablespoon fresh lemon juice
08 - 2 tablespoons fresh parsley or basil, chopped

# Instructions:

01 - Trim the ends and slice into 1/4-inch lengthwise planks for grilling, or 1/4-inch rounds for roasting. Pat the slices dry with a paper towel.
02 - Whisk olive oil, minced garlic, salt, pepper, and dried Italian seasoning together in a small bowl until combined and the garlic is evenly distributed.
03 - Lay the zucchini slices in a single layer on a work surface or sheet pan. Brush both sides evenly with the seasoned oil, making sure all cut surfaces are coated.
04 - For grilling, cook over medium-high heat for 3-4 minutes per side until char marks appear and the center is tender when pressed. For the oven, roast at 425°F (220°C) for 10-12 minutes, flipping once halfway through.
