01 - 1 whole fresh pineapple, peeled, cored, and sliced into 8 spears
02 - 60 grams light brown sugar
03 - 0.25 teaspoon cayenne pepper
04 - 1 teaspoon vanilla extract
05 - 0.125 teaspoon kosher salt

# Instructions:

01 - In a large mixing bowl, combine pineapple spears with light brown sugar, cayenne pepper, vanilla extract, and kosher salt. Toss thoroughly to ensure spears are evenly coated.
02 - Cover the bowl with plastic wrap. Let pineapple marinate for 30 minutes at room temperature, or refrigerate overnight for enhanced flavor. Reserve excess marinade.
03 - Preheat a grill pan over high heat. Lightly spray the surface with vegetable oil just prior to grilling.
04 - Grill marinated pineapple spears for 1 to 2 minutes per side, turning once, until distinct grill marks develop.
05 - While grilling, pour reserved marinade liquid into a microwave-safe bowl and heat for 90 seconds until it reduces to a thick syrup.
