Comfort Food (Print Version)

# Ingredients:

01 - 3 cups fresh broccoli florets, chopped.
02 - 3 ¼ cups milk (plus more to thin, if needed).
03 - 1 (14.5 oz) can chicken broth.
04 - 2 ½ cups cheddar cheese, shredded.
05 - ½ cup heavy cream.
06 - 6 tablespoons butter, cut into 1-tablespoon pieces.
07 - 1 cup yellow onion, finely chopped.
08 - ⅓ cup Parmesan cheese, finely shredded.
09 - 1 teaspoon minced garlic.
10 - ¼ cup all-purpose flour, plus 2 additional tablespoons.
11 - Salt and freshly ground black pepper, to taste.

# Instructions:

01 - In a pot over medium-high heat, melt the butter. Add the chopped onions and cook, stirring often, until almost tender, about 4 to 5 minutes.
02 - Add the minced garlic and flour to the pot, cooking for 1 minute while stirring continuously to avoid burning.
03 - Gradually whisk in the milk, followed by the chicken broth. Add the chopped broccoli and continue to stir until the mixture starts to thicken.
04 - Reduce the heat to low and cook, stirring frequently, until the broccoli becomes tender, about 6 to 8 minutes.
05 - Remove the pot from heat, and stir in the heavy cream. Add the cheddar and Parmesan cheeses, stirring until melted and smooth.
06 - Season the soup with salt and freshly ground black pepper to taste. Serve warm, garnished with additional cheddar cheese if desired.
