Broccoli Cheese Soup (Print Version)

# Ingredients:

01 - 1 tablespoon melted butter.
02 - ½ medium onion, chopped.
03 - ¼ cup melted butter.
04 - ¼ cup all purpose flour.
05 - 2 cups heavy cream.
06 - 2 cups chicken broth.
07 - ½ lb fresh broccoli, chopped.
08 - 1 carrot, peeled and shredded.
09 - ¼ teaspoon nutmeg.
10 - 8 ounces sharp cheddar cheese, grated.
11 - Salt and pepper to taste.

# Instructions:

01 - Sauté onion in 1 tablespoon melted butter in large pot until soft.
02 - Add flour and ¼ cup melted butter. Stir with onions over medium heat 3-4 minutes until thickened.
03 - Slowly whisk in heavy cream and chicken broth.
04 - Add broccoli and carrots. Simmer covered on medium-low for 25 minutes until vegetables are tender.
05 - Add nutmeg, salt, pepper and cheddar cheese. Stir until cheese melts.

# Notes:

01 - Can use immersion blender for smoother texture.
02 - Keeps 4-5 days in refrigerator.
03 - Can use frozen broccoli instead of fresh.
