Broccoli Cauliflower Cheese Sausage (Print Version)

# Ingredients:

01 - 680 grams sausage, sliced and quartered
02 - 225 grams broccoli, cut into florets
03 - 680 grams cauliflower, cut into florets

04 - 240 millilitres heavy cream
05 - 240 millilitres water
06 - 28 grams unsalted butter
07 - 240 millilitres chicken bone broth
08 - 110 grams sharp cheddar cheese, grated

→ Garnish

09 - 5 slices unsweetened bacon, crisp-cooked and chopped

→ Seasonings

10 - 0.25 teaspoon mustard seed
11 - 0.25 teaspoon dried marjoram
12 - 0.25 teaspoon dried thyme
13 - Salt and freshly ground black pepper, to taste
14 - 0.25 teaspoon garlic powder
15 - 0.25 teaspoon onion powder
16 - Olive oil, as needed

# Instructions:

01 - In a small container, combine onion powder, garlic powder, mustard seed, marjoram, and thyme.
02 - In a saucepan, pour chicken bone broth and cover. Bring to a boil, then add cauliflower and broccoli. Season with salt and black pepper, and simmer for 4 to 5 minutes. Remove from heat and set aside.
03 - Heat olive oil in a large skillet over medium heat. Add sausage pieces and brown thoroughly. Once caramelised, transfer to a plate and set aside.
04 - Reduce the saucepan to low heat, add heavy cream and water. Introduce butter and stir gently until melted. Gradually add grated cheddar, stirring until fully incorporated and smooth.
05 - Return cooked sausage to the saucepan. Season with half of the prepared seasoning mixture.
06 - Add cooked broccoli, cauliflower, and broth to the saucepan. Sprinkle in remaining seasoning blend; adjust salt and black pepper as needed. Mix well, cover and simmer for 5 to 8 minutes, stirring occasionally.
07 - Transfer to serving bowls and top generously with chopped bacon. Serve hot.
