Heat oven to 350°F. Line baking sheet with parchment paper.

Cut puff pastry sheet into 16 equal squares. Place on baking sheet.

Top each square with 3-4 apple slices and a piece of brie. Fold corners to center and press gently.

Brush pastries with whisked egg.

Bake 15-20 minutes until golden and puffed. Serve warm.
