BREAKFAST NACHOS (Print Version)

A delicious breakfast idea with crispy potatoes, savory sausage, eggs, and melted cheese.

# Ingredients:

01 - 3-4 medium or large potatoes, any variety
02 - 2 tablespoons olive oil
03 - 1/2 teaspoon salt
04 - 4 eggs or 1 cup liquid egg substitute
05 - 1 pound pork sausage
06 - 1 cup diced tomatoes, drained (from a 14.5 oz can)
07 - 1 cup shredded cheddar cheese

# Instructions:

01 - Preheat the oven to 425°F and place a baking sheet with a raised edge inside to heat.
02 - Wash the potatoes and slice them thinly (about 1/8 inch thick). Toss the sliced potatoes with olive oil and salt in a bowl until evenly coated.
03 - Arrange the seasoned potato slices in a single layer on the heated baking sheet, avoiding overlap. Bake for 25 minutes, flipping the slices halfway through.
04 - While the potatoes are baking, cook the pork sausage in a skillet over medium heat until browned. Set aside.
05 - About 10 minutes before the potatoes are done, scramble the eggs (or liquid egg substitute) in a separate skillet. Set aside.
06 - Once the potatoes are done, remove them from the oven and sprinkle half of the shredded cheddar cheese on top. Layer the cooked sausage, scrambled eggs, and diced tomatoes on top. Finish with the remaining cheese.
07 - Return the pan to the oven for 3-4 minutes, or until the cheese is melted. Serve immediately.
