# Ingredients:

For the brie bites

01 - 15 frozen mini phyllo shells, about 1 package
02 - 6 oz (170 g) brie, trimmed if desired and cut into 15 small cubes

For the bourbon pecan topping

03 - 1/4 cup (30 g) chopped pecans, toasted if desired
04 - 1/4 cup (55 g) packed brown sugar
05 - 2 tablespoons (28 g) unsalted butter, melted
06 - 1 tablespoon bourbon
07 - 1 small pinch flaky salt
08 - 1 teaspoon fresh thyme leaves, optional

# Instructions:

01 - Preheat the oven to 350°F. Arrange the frozen mini phyllo shells on a rimmed baking sheet.
02 - Trim the thick outer rind from the brie if you prefer a smoother melt. Cut the brie into 15 small cubes that fit inside the phyllo shells.
03 - In a small bowl, stir together the chopped pecans, brown sugar, melted butter, bourbon, and flaky salt until the pecans are evenly coated.
04 - Place one cube of brie into each phyllo shell. Spoon about 1/2 teaspoon of the bourbon pecan mixture over each cube.
05 - Bake for 8-10 minutes, until the brie is melted and the topping is bubbling lightly. Do not overbake, or the shells can darken too much.
06 - Let the bites cool on the pan for 2 minutes. Sprinkle with fresh thyme if using, then serve warm or at room temperature.
