Preheat the oven to 350°F. Arrange the frozen mini phyllo shells on a rimmed baking sheet.

Trim the thick outer rind from the brie if you prefer a smoother melt. Cut the brie into 15 small cubes that fit inside the phyllo shells.

In a small bowl, stir together the chopped pecans, brown sugar, melted butter, bourbon, and flaky salt until the pecans are evenly coated.

Place one cube of brie into each phyllo shell. Spoon about 1/2 teaspoon of the bourbon pecan mixture over each cube.

Bake for 8-10 minutes, until the brie is melted and the topping is bubbling lightly. Do not overbake, or the shells can darken too much.

Let the bites cool on the pan for 2 minutes. Sprinkle with fresh thyme if using, then serve warm or at room temperature.
