Blackberry Balsamic and Brie Grilled Cheese (Print Version)

# Ingredients:

01 - Fresh blackberries (2 cups).
02 - Balsamic vinegar (3 tablespoons).
03 - Granulated sugar (6 tablespoons).
04 - Fresh lemon juice (2 tablespoons).
05 - Kosher salt (pinch).
06 - Double cream brie cheese (300g).
07 - Fresh thyme, chopped (1 tablespoon).
08 - Sourdough bread (8 slices).
09 - Butter, room temperature, as needed.

# Instructions:

01 - Cook blackberries, vinegar, sugar, lemon juice and salt until thick and jammy.
02 - Slice brie into 1/2 inch thick pieces.
03 - Warm skillet over medium heat, not too hot.
04 - Butter bread, add brie, sprinkle thyme, spread jam on other slice.
05 - Grill until bread is golden and cheese starts melting.
06 - Add jam-spread slice, butter top, flip and cook until golden.

# Notes:

01 - Let jam cool before using.
02 - Cook on medium heat to melt cheese properly.
03 - May need to cook in batches.
