Black Bean and Egg Bake (Print Version)

# Ingredients:

01 - 3 tablespoons olive oil.
02 - 3 cloves garlic, chopped.
03 - 1 medium yellow onion, chopped.
04 - 2 tablespoons tomato paste.
05 - 1 tablespoon chili powder.
06 - 1/2 teaspoon ground cumin.
07 - 1/2 teaspoon kosher salt.
08 - 14.5 oz can petite diced tomatoes.
09 - 4 oz can chopped green chiles.
10 - 15 oz can black beans, drained.
11 - 4 large eggs.
12 - 1/4 cup cotija cheese.
13 - 1 tablespoon cilantro.
14 - 8 tortillas for serving.

# Instructions:

01 - Heat oven to 375°F.
02 - Sauté garlic and onion in oil 7-9 minutes until golden.
03 - Add tomato paste, spices, tomatoes, chiles and beans. Bring to simmer.
04 - Crack eggs into sauce, nestling them in.
05 - Cook uncovered 15-20 minutes until whites set but yolks still liquid.
06 - Top with cheese and cilantro, serve with warm tortillas.

01 - Cook eggs to desired doneness.
02 - Bean base can be made ahead.
03 - Best served fresh.
