Better Than Texas Roadhouse Loaded Smashburger Sandwich (Print version)

A messy loaded smashburger sandwich with crispy beef, melted cheese, bacon, grilled onions, pickles, and burger sauce on buttery Texas toast.

# Ingredients:

For the burger sauce

01 - 1/2 cup (120 g) mayonnaise
02 - 2 tablespoons ketchup
03 - 1 tablespoon yellow mustard
04 - 2 tablespoons dill pickle relish
05 - 1/2 teaspoon smoked paprika
06 - 1/2 teaspoon garlic powder
07 - 1 teaspoon hot sauce, optional

For the sandwich

08 - 1 1/2 lb (680 g) 80/20 ground beef, divided into 8 loose balls
09 - 1 teaspoon kosher salt
10 - 1/2 teaspoon black pepper
11 - 8 slices Texas toast
12 - 3 tablespoons unsalted butter, softened
13 - 8 slices American cheese
14 - 8 slices cooked bacon
15 - 1 small yellow onion, thinly sliced and griddled
16 - 1 cup shredded iceberg lettuce
17 - 1/2 cup dill pickle chips
18 - Pickled jalapenos, optional

# Instructions:

01 - Stir together the mayonnaise, ketchup, mustard, relish, smoked paprika, garlic powder, and hot sauce. Refrigerate while you cook the sandwiches.
02 - Spread both sides of each bread slice with softened butter. Toast in a large skillet or on a griddle over medium heat until golden and crisp, 1-2 minutes per side. Set aside on a rack.
03 - Heat a cast iron skillet or flat griddle over medium-high heat until very hot. Have parchment squares and a sturdy metal spatula ready.
04 - Place beef balls on the hot surface with room between them. Cover each with parchment and press hard for about 10 seconds until very thin. Season with salt and pepper.
05 - Cook until the edges are deeply browned, 2-3 minutes. Scrape under each patty, flip, add cheese, and cook 1 minute more until melted and the beef reaches 160 degrees F.
06 - Spread sauce on the toast. Stack lettuce, two cheesy patties, bacon, griddled onion, pickles, jalapenos if using, and more sauce on each sandwich.
07 - Top with the remaining toast, press gently, and cut in half. Serve immediately while the toast is crisp and the cheese is melted.
