Crispy fries, seasoned beef, and creamy cheddar sauce tucked into toasted burrito-size tortillas.

# Ingredients:

For the fries

01 - 1 lb (450 g) frozen seasoned or plain French fries
02 - 1/4 teaspoon fine salt, plus more as needed

For the beef

03 - 1 tablespoon neutral oil
04 - 1/2 small yellow onion, finely diced
05 - 1 lb (450 g) ground beef, 80/20 or 85/15
06 - 2 cloves garlic, minced
07 - 2 teaspoons chili powder
08 - 1 teaspoon ground cumin
09 - 1/2 teaspoon smoked paprika
10 - 1/2 teaspoon dried oregano
11 - 1/2 teaspoon fine salt
12 - 1/4 teaspoon black pepper
13 - 1/3 cup (80 ml) water

For the cheese sauce

14 - 3/4 cup (180 ml) evaporated milk
15 - 1 cup (115 g) freshly shredded sharp cheddar cheese
16 - 1/2 cup (55 g) freshly shredded Monterey Jack cheese
17 - 1 teaspoon cornstarch
18 - 1 tablespoon sliced pickled jalapenos, finely chopped, optional

For assembling

19 - 4 large burrito-size flour tortillas, 10 inches each
20 - 1/3 cup (80 g) sour cream
21 - 1 cup (35 g) shredded lettuce
22 - 1 medium tomato, seeded and diced
23 - 1/4 cup sliced pickled jalapenos, optional
24 - Hot sauce, for serving, optional

# Instructions:

01 - Bake or air fry the fries according to the package directions until crisp and browned at the edges. Season lightly with salt while hot and keep them warm.
02 - Heat the oil in a large skillet over medium-high heat. Add the onion and cook for 2 minutes, then add the ground beef and cook for 6-8 minutes, breaking it into small crumbles, until browned and cooked through.
03 - Drain excess fat if needed. Stir in the garlic, chili powder, cumin, smoked paprika, oregano, salt, pepper, and water. Simmer for 2-3 minutes, until the beef is glossy and the liquid has mostly cooked off.
04 - Warm the evaporated milk in a small saucepan over low heat. Toss the shredded cheeses with the cornstarch, then stir them into the milk by handfuls until smooth. Stir in chopped jalapenos if using.
05 - Warm the tortillas in a dry skillet for 10-15 seconds per side, or microwave them under a damp paper towel for 20 seconds, until pliable.
06 - Spread each tortilla with sour cream. Add seasoned beef, crisp fries, warm cheese sauce, lettuce, tomato, and jalapenos down the center, leaving room around the edges.
07 - Fold in the sides and roll each tortilla tightly. Toast seam side down in a dry skillet over medium heat for 2-3 minutes per side, until golden and sealed. Rest 1 minute, then slice and serve with hot sauce.
