Easy Ground Beef Rice Skillet (Print Version)

01 - 1 pound ground beef
02 - 1 medium yellow onion, diced
03 - 1 medium red bell pepper, diced
04 - 3 cloves garlic
05 - 1 teaspoon salt
06 - 1 teaspoon pepper
07 - 10 ounces Rotel tomatoes with chilies
08 - 1 cup long grain rice
09 - 1½ cups beef broth
10 - 1 tablespoon Worcestershire sauce
11 - 1 cup cheddar cheese, shredded
12 - Fresh parsley for garnish (optional)

# Instructions:

01 - Start by heating up a large skillet over medium heat. Add the ground beef, garlic, salt and pepper, and cook until the beef is nicely browned. Drain off any excess fat and return the skillet to the stove.
02 - Toss in the diced onion and red pepper with the beef. Let them cook together for about 3-4 minutes until the vegetables start to soften and become fragrant.
03 - Now add your rice, the undrained Rotel tomatoes, beef broth, and Worcestershire sauce. Stir everything together until well combined to make sure all the flavors will blend nicely.
04 - Bring the mixture to a boil, then reduce the heat and cover the skillet. Let it simmer for about 20 minutes, or until the rice becomes perfectly tender.
05 - Take the skillet off the heat and sprinkle generously with shredded cheese. Cover and let it rest for 5 minutes until the cheese gets melty and delicious. Finish with a sprinkle of fresh parsley if you'd like!
