# Ingredients:

For the beef and bacon

01 - 6 oz (170 g) beef bacon, chopped
02 - 1 lb (450 g) lean ground beef
03 - 1/2 small yellow onion, finely diced
04 - 2 tablespoons taco seasoning
05 - 1/3 cup (80 ml) water
06 - 1/4 teaspoon black pepper

For the nachos

07 - 1 large bag (9-10 oz / 255-285 g) nacho cheese Doritos or similar flavored tortilla chips
08 - 2 cups (225 g) shredded Mexican cheese blend
09 - 1 cup (160 g) pico de gallo, drained if juicy
10 - 1/3 cup (45 g) sliced pickled jalapenos
11 - 1 cup (40 g) shredded lettuce
12 - 2 tablespoons chopped fresh cilantro
13 - 1 lime, cut into wedges

For the ranch crema

14 - 1/2 cup (120 g) sour cream
15 - 1 tablespoon ranch seasoning
16 - 1 tablespoon lime juice
17 - 1-2 teaspoons water, as needed for drizzling

# Instructions:

01 - Heat a large skillet over medium heat. Cook the chopped beef bacon for 5-7 minutes, stirring often, until browned and crisp at the edges. Transfer to a paper towel-lined plate.
02 - Pour off excess fat, leaving about 1 tablespoon in the skillet. Add the ground beef and onion. Cook for 6-8 minutes, breaking the beef into small crumbles, until no pink remains.
03 - Stir in the taco seasoning, water, and black pepper. Simmer for 2-3 minutes, until the mixture is thick and glossy rather than wet.
04 - In a small bowl, stir together the sour cream, ranch seasoning, lime juice, and enough water to make a spoonable drizzle.
05 - Heat the oven to 375°F (190°C). Spread half the Doritos on a rimmed sheet pan. Top with half the cheese, beef, and beef bacon. Repeat with the remaining chips, cheese, beef, and bacon.
06 - Bake for 6-8 minutes, until the cheese is melted. Top with pico de gallo, jalapenos, lettuce, cilantro, and ranch crema. Serve right away with lime wedges.
