Homemade BBQ Chicken Pizza (Print Version)

# Ingredients:

→ Base

01 - 1/2 recipe homemade pizza dough (or 1 lb. store-bought pizza dough)
02 - 1 Tablespoon olive oil, divided
03 - 1 Tablespoon cornmeal

→ Toppings

04 - 1/3 cup + 2 Tablespoons your favorite barbecue sauce
05 - 1 cup chopped or shredded cooked chicken (about one 8-ounce breast)
06 - 2/3 cup shredded mozzarella cheese
07 - 2/3 cup shredded smoked gouda cheese
08 - 1/2 small red onion, thinly sliced
09 - 1 Tablespoon chopped fresh cilantro, for topping (or use basil)

# Instructions:

01 - If using homemade dough, prepare through step 3. For store-bought frozen dough, ensure it's fully thawed.
02 - Heat oven to 475°F (246°C) for 15-20 minutes. Grease a large baking sheet with 1/2 Tablespoon olive oil and sprinkle with cornmeal. If using a pizza stone, place it in the oven while preheating.
03 - Punch down dough to release air bubbles. On a floured surface, flatten into a 12-inch circle about 1/2-inch thick. Create a lip around the edges. Let rest covered for a few minutes.
04 - Make dents in dough surface to prevent bubbling. Brush with olive oil, spread BBQ sauce, add chicken tossed in remaining sauce, then top with cheeses and red onion.
05 - Bake for 14-15 minutes until crust is golden brown. Top with fresh cilantro if desired. Serve immediately.

# Notes:

01 - You can freeze the baked pizza or slices for up to 3 months. Thaw in refrigerator or at room temperature.
02 - Reheat cold pizza in microwave or in 350°F oven until warm (10 minutes for slices, 15-20 minutes for whole pizza).
03 - If you don't have smoked gouda, use additional mozzarella instead. Onion and cilantro are optional.
