Preheat oven to 190°C (375°F). Line a baking tray with parchment paper.

Heat unsalted butter in a small skillet over medium-high heat. Add red onion and sauté until softened. Remove from heat and set aside.

Roll out pizza dough into a rectangle on parchment paper.

Arrange provolone cheese in a row down the centre of the dough. In a bowl, combine shredded chicken, sautéed onions, and barbecue sauce. Evenly distribute this mixture over the cheese.

Carefully roll the dough into a log, using the parchment to assist. Position the roll seam-side down and tuck the ends underneath to seal.

Brush the exterior of the roll with beaten egg. Sprinkle with Italian seasoning and grated Parmesan. Score several diagonal slits along the top with a sharp knife.

Bake for 20 to 25 minutes or until golden brown and crisp.

Allow to cool slightly, then slice and serve with additional barbecue sauce if desired.
