Air Fryer Bang Bang Tacos (Print Version)

# Ingredients:

→ For the Shrimp

01 - 1 lb large raw shrimp, peeled, deveined & tail-off
02 - 2 large eggs
03 - 1.5 cups panko breadcrumbs
04 - ½ cup tapioca flour (or arrowroot starch or cornstarch)
05 - ½ teaspoon paprika
06 - ½ teaspoon garlic powder
07 - ¼ teaspoon onion powder
08 - Kosher salt & black pepper to taste
09 - Cooking spray

→ Bang Bang Sauce

10 - ½ cup mayonnaise
11 - ¼ cup thai sweet chili sauce
12 - 1 teaspoon sriracha (or more for extra heat)

→ For the Slaw

13 - 8 oz coleslaw mix
14 - ¼ cup chopped cilantro
15 - ¼ cup chopped green onion
16 - 2 tablespoons mayonnaise
17 - Juice from ½ lime
18 - Sriracha to taste
19 - Kosher salt to taste

→ For Serving

20 - 10 flour tortillas
21 - Chopped green onion for garnish

# Instructions:

01 - Pat shrimp dry. Set up three shallow bowls: one with seasoned tapioca flour, one with beaten eggs and water, and one with breadcrumbs.
02 - Dip each shrimp in flour, then egg, then breadcrumbs. Place in air fryer basket and spray with oil. Work in batches if needed.
03 - Air fry at 390°F for 7 minutes, flipping halfway and spraying the other side with oil after flipping.
04 - While shrimp cooks, whisk together mayonnaise, sweet chili sauce, and sriracha in a medium bowl.
05 - Mix coleslaw, cilantro, green onion, mayonnaise, lime juice, sriracha, and salt in a large bowl until well combined.
06 - Toss cooked shrimp with bang bang sauce, reserving some sauce for garnish if desired.
07 - Warm tortillas and build tacos with slaw, sauced shrimp, extra bang bang sauce, and green onion garnish.

01 - Make gluten-free by using gluten-free panko and tortillas.
02 - Each taco contains 3-4 large shrimp.
