Pat shrimp dry. Set up three shallow bowls: one with seasoned tapioca flour, one with beaten eggs and water, and one with breadcrumbs.

Dip each shrimp in flour, then egg, then breadcrumbs. Place in air fryer basket and spray with oil. Work in batches if needed.
