Banana Cinnamon Rolls with Cream Cheese Icing (Print version)

# Ingredients:

For the dough

01 - 2 1/4 teaspoons (7 g) instant yeast
02 - 3/4 cup (180 ml) whole milk, warmed to 105-110°F
03 - 1/3 cup (65 g) granulated sugar
04 - 4 tablespoons (55 g) unsalted butter, melted
05 - 1 cup (225 g) very ripe banana, mashed (about 2 medium)
06 - 1 large egg, room temperature
07 - 4 cups (480 g) bread flour, plus more for dusting
08 - 1 teaspoon fine sea salt

For the filling

09 - 3/4 cup (165 g) packed dark brown sugar
10 - 2 tablespoons ground cinnamon
11 - 4 tablespoons (55 g) unsalted butter, very soft

For the cream cheese icing

12 - 4 oz (115 g) cream cheese, softened
13 - 2 tablespoons (28 g) unsalted butter, softened
14 - 1 1/2 cups (180 g) powdered sugar
15 - 1/2 teaspoon vanilla extract
16 - 1 tablespoon whole milk, plus more if needed

# Instructions:

01 - In the bowl of a stand mixer fitted with the dough hook, combine warm milk, yeast, sugar, melted butter, mashed bananas, and egg. Add bread flour and salt. Mix on low until combined, then knead on medium for about 8 minutes until the dough is smooth and stretchy.
02 - Transfer the dough to a lightly oiled bowl. Cover with plastic wrap or a damp towel and let rise in a warm spot until doubled in size, about 60 to 90 minutes.
03 - In a small bowl, stir together the brown sugar and cinnamon. Set aside with the softened butter.
04 - Turn the risen dough out onto a floured surface and roll into an 18 by 12 inch rectangle. Spread the softened butter evenly over the dough, then sprinkle the cinnamon sugar mixture all the way to the edges.
05 - Roll the dough tightly from the long side into a log. Pinch the seam to seal. Use unflavored dental floss to cut into 12 even rolls.
06 - Arrange the rolls cut-side up in a parchment-lined 9 by 13 inch baking pan. Cover and let rise until puffy, 30 to 45 minutes. Bake at 350°F (175°C) for 28 to 32 minutes until golden brown.
07 - Beat the cream cheese and butter together until smooth. Gradually add powdered sugar, then vanilla and milk. Beat until light and fluffy, about 2 minutes. Spread generously over the warm rolls.
