Baked Potato Chicken and Broccoli Casserole (Print version)

Creamy, cheesy, and loaded with tender chicken, soft potatoes, and bright broccoli, this one-dish casserole is a complete family dinner ready in under an hour.

# Ingredients:

For the casserole

01 - 1.5 lbs (680 g) boneless skinless chicken breast, cooked and diced
02 - 2 lbs (900 g) russet potatoes (about 4 medium), peeled and cut into 3/4-inch cubes
03 - 3 cups (270 g) broccoli florets, cut into 1-inch pieces
04 - 1 can (10.5 oz / 298 g) cream of chicken soup
05 - 1 cup (240 g) sour cream
06 - 1/2 cup (120 ml) chicken broth
07 - 1 teaspoon garlic powder
08 - 1 teaspoon onion powder
09 - 1/2 teaspoon smoked paprika
10 - Salt and black pepper to taste
11 - 2 cups (225 g) sharp cheddar cheese, freshly grated and divided

# Instructions:

01 - Bring a large pot of salted water to a boil. Add the cubed potatoes and cook for 8 to 10 minutes until just barely fork-tender. Drain and set aside.
02 - Season diced chicken with salt, pepper, and a pinch of garlic powder. Cook in a lightly oiled skillet over medium-high heat for 6 to 8 minutes until cooked through and lightly golden. Alternatively, use 2 cups of shredded rotisserie chicken.
03 - Preheat the oven to 375°F (190°C). Grease a 9x13-inch baking dish with butter or cooking spray.
04 - In a large bowl, stir together the cream of chicken soup, sour cream, chicken broth, garlic powder, onion powder, smoked paprika, and 1 cup of the grated cheddar until smooth.
05 - Add the par-cooked potatoes, cooked chicken, and broccoli florets to the sauce bowl. Fold gently until everything is evenly coated, then transfer to the prepared baking dish and spread evenly.
06 - Scatter the remaining 1 cup of cheddar over the top. Cover tightly with foil and bake for 25 minutes. Remove the foil and bake for another 10 to 15 minutes until the cheese is golden and the edges are bubbling.
07 - Let the casserole rest for 5 minutes before scooping. This allows the sauce to settle and makes it easier to serve in clean portions.
