Baked Pears with Berries, Honey, Walnuts, and Blue Cheese (Print version)

Tender baked pears loaded with fresh berries, crunchy toasted walnuts, tangy blue cheese, and golden honey. Ready in 30 minutes and impressive every time.

# Ingredients:

For the pears

01 - 4 firm Bosc or Bartlett pears
02 - 2 tablespoons unsalted butter, melted
03 - 1/4 teaspoon ground cinnamon
04 - Pinch of flaky sea salt, to finish

For the topping

05 - 1 cup (150 g) mixed fresh berries (raspberries, blueberries, blackberries)
06 - 1/2 cup (55 g) walnut halves, roughly chopped and toasted
07 - 3 oz (85 g) blue cheese, crumbled (Gorgonzola dolce or Roquefort)
08 - 3 tablespoons honey, plus extra to drizzle at the end

# Instructions:

01 - Set the oven to 375°F (190°C). Lightly grease a baking dish large enough to hold 8 pear halves in a single layer.
02 - Cut each pear in half lengthwise. Use a melon baller or small spoon to scoop out the core and seeds. Trim a thin slice from the rounded bottom of each half so it sits flat, cut side up, in the baking dish.
03 - Arrange the pear halves cut side up in the prepared dish. Brush the cut surfaces with melted butter and dust lightly with cinnamon.
04 - Spoon berries into each pear cavity and scatter the toasted walnuts over the top. Crumble blue cheese over everything and drizzle each pear with honey.
05 - Bake for 25 to 30 minutes, until the pears yield easily when pierced with a knife and the cheese has melted and turned golden at the edges.
06 - Drizzle with extra honey while still hot and add a pinch of flaky sea salt. Serve warm, as is or with a scoop of vanilla ice cream.

# Good to know:

01 - Best served warm, right out of the oven.
02 - Firm, slightly underripe Bosc pears hold their shape best during baking.
