Easy Baked Garlic Butter Potatoes (Print version)

Easy baked garlic butter potatoes with crispy edges and creamy centers, ready in about 40 minutes with everyday pantry staples.

# Ingredients:

For the potatoes

01 - 2 lb (900 g) baby Yukon Gold potatoes, scrubbed and halved
02 - 4 tablespoons unsalted butter, melted
03 - 4 cloves garlic, minced
04 - 1 teaspoon kosher salt
05 - 1/2 teaspoon freshly ground black pepper
06 - 2 tablespoons chopped fresh parsley
07 - Flaky sea salt, for finishing

# Instructions:

01 - Preheat the oven to 400°F (200°C). Scrub the potatoes and cut them into even bite-sized pieces. Pat them completely dry with a clean towel.
02 - Melt the butter in a small bowl or saucepan. Remove from the heat and stir in the minced garlic, kosher salt, and black pepper.
03 - Add the potatoes to the bowl and toss until every piece is coated in the garlic butter.
04 - Spread the potatoes cut-side down on a parchment-lined baking sheet, leaving space between them. Roast for 35 to 40 minutes, flipping once halfway, until deeply golden and tender when pierced with a fork.
05 - Transfer the hot potatoes to a serving bowl, sprinkle with parsley and a pinch of flaky salt, and serve immediately.

# Good to know:

01 - Best served hot from the oven while the edges are crisp.
02 - For extra crispness, broil for the last 2 to 3 minutes, watching closely.
