Baked Blueberry Fritter Bites (Print version)

Tender baked blueberry fritter bites with warm cinnamon, juicy berries, and a quick lemon glaze.

# Ingredients:

For the fritter bites

01 - 1 1/2 cups (180 g) all-purpose flour
02 - 1 1/2 teaspoons baking powder
03 - 1/4 teaspoon fine salt
04 - 1/2 teaspoon ground cinnamon
05 - 1/8 teaspoon ground nutmeg
06 - 1/2 cup (100 g) granulated sugar
07 - 1 large egg
08 - 1/3 cup (80 ml) whole milk
09 - 1/4 cup (60 g) plain Greek yogurt or sour cream
10 - 3 tablespoons (42 g) unsalted butter, melted and cooled slightly
11 - 1 teaspoon vanilla extract
12 - 1 teaspoon finely grated lemon zest
13 - 1 cup (150 g) blueberries, fresh or frozen

For the lemon glaze

14 - 1 cup (120 g) powdered sugar
15 - 2 tablespoons fresh lemon juice, plus more as needed
16 - 1 tablespoon milk, as needed for thinning
17 - Pinch of fine salt

# Instructions:

01 - Heat the oven to 375°F (190°C). Grease a 24-cup mini muffin pan well, including the top surface between cups.
02 - Whisk the flour, baking powder, salt, cinnamon, nutmeg, and granulated sugar in a medium bowl until evenly mixed.
03 - In a separate bowl, whisk the egg, milk, Greek yogurt, melted butter, vanilla, and lemon zest until smooth.
04 - Pour the wet ingredients into the dry ingredients and stir just until no dry flour remains. Gently fold in the blueberries without crushing them.
05 - Divide the batter among the mini muffin cups, filling each almost full. Bake for 12-14 minutes, until the tops are lightly golden and spring back when touched.
06 - Whisk powdered sugar, lemon juice, milk, and a pinch of salt until smooth and pourable. Add more lemon juice or milk a few drops at a time if needed.
07 - Cool the bites in the pan for 5 minutes, then loosen and transfer to a rack. Dip the warm tops in glaze and let stand for 10 minutes before serving.

# Good to know:

01 - Best served warm the day they are baked.
02 - Use frozen blueberries straight from the freezer to reduce streaking.
03 - The glaze should be thin enough to dip but thick enough to coat the tops.
