Bacon Guacamole Grilled Cheese (Print Version)

Sourdough loaded with bacon, guac, and gooey cheese makes one mouthwatering, melty sandwich. Every bite is super satisfying.

# Ingredients:

01 - 3 to 4 tortilla chips, crushed (toss these in for a little crunch if you want)
02 - 4 bacon strips, cooked till crispy
03 - 2 tablespoons guacamole, softened at room temp
04 - 1/2 cup shredded Colby Jack cheese
05 - 2 slices sourdough bread
06 - 2 tablespoons salted butter, soft

# Instructions:

01 - Flip the sandwich with a spatula. Let the other side toast till it's golden and the cheese's all gooey, maybe another 2 to 4 minutes. Eat up right away.
02 - Move your stacked sandwich right onto the hot skillet. Let the bottom cook until it's toasty brown, which should take around 2 to 4 minutes.
03 - Lay one bread slice down, buttered side hitting the hot surface. First, sprinkle half the cheese on the plain side. Spread that guac next, pile on your bacon, add crushed chips if that's your thing, then finish with the rest of the cheese. Top it off with the second slice, buttered side facing up.
04 - While your pan warms up, smear butter over one side of each bread slice.
05 - Get your skillet hot over medium heat.

01 - If you gently press with a spatula while you grill, you'll get better melt and color.
