Avocado Toast with Scrambled Eggs and Fresh Fruit (Print version)

# Ingredients:

For the avocado toast

01 - 2 thick slices sourdough or whole grain bread
02 - 1 large ripe avocado
03 - 1 teaspoon fresh lemon juice
04 - 1/4 teaspoon red pepper flakes, plus more to finish
05 - Flaky sea salt, to taste
06 - 1 teaspoon everything bagel seasoning (optional)

For the scrambled eggs

07 - 3 large eggs
08 - 1 tablespoon unsalted butter
09 - 1 tablespoon whole milk or cream (optional)
10 - Pinch of salt

For the fresh fruit

11 - 1/2 cup (75 g) fresh strawberries, hulled and halved
12 - 1/4 cup (35 g) fresh blueberries
13 - 1 kiwi, peeled and sliced
14 - 1 small mandarin or orange, peeled and segmented
15 - Drizzle of honey (optional)

# Instructions:

01 - Place the bread in a toaster or under a broiler set to high. Toast until deep golden and fully crisp through the center, about 3 to 4 minutes on the highest toaster setting. Set aside on a plate.
02 - Halve and pit the avocado. Scoop the flesh into a small bowl. Add the lemon juice, red pepper flakes, and a pinch of salt. Mash with a fork to a rough, creamy consistency with a little texture remaining. Taste and adjust seasoning.
03 - Crack the eggs into a bowl, add the milk or cream if using, and season with a pinch of salt. Whisk until fully combined. Melt the butter in a nonstick pan over medium-low heat. Pour in the eggs and let sit for 10 seconds. Fold gently with a silicone spatula every few seconds. Remove from heat while still slightly glossy and just barely set. They will finish cooking from residual heat.
04 - Spread the avocado mash generously over both slices of warm toast, all the way to the edges. Spoon the soft scrambled eggs on top. Finish with flaky sea salt, a pinch of red pepper flakes, and everything bagel seasoning if using.
05 - Arrange the strawberries, blueberries, kiwi slices, and orange segments alongside the toast on each plate. Drizzle with a little honey if desired. Serve immediately while the toast is still crisp and the eggs are warm.
