Asado Chicken Breast Lemon Zucchini (Print Version)

Marinated chicken breast and lemony zucchini combine for a vibrant, easy skillet meal perfect for weeknights.

# Ingredients:

→ For the Asado Chicken Breast

01 - 1.5 kg boneless skinless chicken breasts
02 - 8 garlic cloves, finely minced
03 - 1 tablespoon smoked paprika
04 - 2 teaspoons ground cumin
05 - 2 teaspoons dried oregano
06 - 1/2 teaspoon onion powder
07 - 1/2 teaspoon chili flakes
08 - 60 ml chicken stock
09 - 60 ml freshly squeezed lemon juice, plus more for serving
10 - 60 ml olive oil, plus extra for cooking
11 - Salt, to taste
12 - Freshly ground black pepper, to taste

→ For the Sauteed Lemon Zucchini

13 - 2 to 3 medium zucchini, diced
14 - Reserved chicken marinade
15 - Fresh parsley, finely chopped, for garnish
16 - Lemon slices, for garnish

# Instructions:

01 - In a large bowl, whisk together smoked paprika, cumin, chicken stock, lemon juice, onion powder, oregano, minced garlic, chili flakes, olive oil, salt, and black pepper until well combined.
02 - Add chicken breasts to the marinade, ensuring all sides are well coated. Cover and refrigerate for at least 30 minutes to allow flavors to develop.
03 - Heat 1 tablespoon olive oil in a large skillet over medium-low heat. Remove chicken from marinade, reserving the excess. Cook chicken breasts on both sides until golden and the internal temperature reaches 74°C, approximately 15 minutes total. Transfer cooked chicken to a plate and cover to keep warm.
04 - Add diced zucchini to the same skillet. Season with salt, black pepper, and additional chili flakes if desired. Sauté over medium-low heat for 2–3 minutes. Pour in remaining marinade and cook for an additional 3–4 minutes, stirring occasionally, until zucchini are tender and the sauce has reduced slightly.
05 - Distribute sautéed zucchini and sauce among plates. Slice the cooked chicken breasts and arrange over the zucchini. Garnish with fresh chopped parsley and lemon slices. Serve immediately with extra lemon juice squeezed over the top as desired.
