Homestyle Arby's Beef and Cheddar Inspired Sandwich (Print version)

A saucy roast beef and cheddar sandwich inspired by the drive-thru favorite, made at home with thin deli beef, red ranch, and warm cheese sauce.

# Ingredients:

For the red ranch sauce

01 - 1/2 cup (120 g) ketchup
02 - 1 tablespoon apple cider vinegar
03 - 1 tablespoon Worcestershire sauce
04 - 2 teaspoons light brown sugar
05 - 1/2 teaspoon onion powder
06 - 1/4 teaspoon garlic powder
07 - 1/4 teaspoon smoked paprika
08 - 1/8 teaspoon fine salt

For the cheddar sauce

09 - 1/2 cup (120 ml) evaporated milk
10 - 4 oz (115 g) American cheese, torn into pieces
11 - 3/4 cup (85 g) shredded sharp cheddar cheese
12 - 1 teaspoon unsalted butter
13 - Pinch of cayenne pepper, optional

For the sandwiches

14 - 4 onion sandwich buns or onion kaiser rolls
15 - 2 tablespoons unsalted butter, softened
16 - 1 lb (450 g) ultra-thin deli roast beef
17 - 1/4 cup (60 ml) low-sodium beef broth

# Instructions:

01 - Whisk ketchup, apple cider vinegar, Worcestershire sauce, brown sugar, onion powder, garlic powder, smoked paprika, and salt in a small bowl until smooth. Set aside so the flavor can settle.
02 - Warm evaporated milk and butter in a small saucepan over low heat. Add American cheese and cheddar a handful at a time, stirring until smooth. Keep warm on the lowest heat.
03 - Spread softened butter on the cut sides of the onion buns. Toast in a skillet over medium heat for 1-2 minutes until golden at the edges.
04 - Place roast beef and beef broth in a skillet. Cover and warm over medium-low heat for 2-3 minutes, just until the beef is hot and steamy. Do not boil it.
05 - Spread about 1 tablespoon red ranch on each bottom bun. Divide the warm roast beef among the buns, spoon cheddar sauce over the beef, add the top buns, and serve immediately.

# Good to know:

01 - Serve immediately for the best bun texture.
02 - Keep sauces separate if making ahead.
03 - Use shaved deli roast beef for the closest texture.
