Cook the ground beef in a skillet over medium heat, breaking it up until no longer pink. Drain the fat. Add the diced onion and minced garlic and cook for 3-4 minutes until softened. Transfer the mixture to the slow cooker.

Add the sliced carrots, diced potatoes, corn kernels, and green beans to the slow cooker on top of the beef mixture.

Spoon the cream of mushroom soup over the vegetables. Sprinkle in the thyme, parsley, salt, and pepper. Stir gently to coat everything evenly.

Cover and cook on LOW for 6-8 hours, until the carrots and potatoes are tender when pierced with a fork.

Sprinkle the shredded cheddar evenly over the top. Cover and cook for an additional 30 minutes until the cheese is fully melted and glossy.

Turn off the slow cooker and let the casserole stand for 10 minutes to thicken. Serve warm.
