# Ingredients:

01 - 2 medium baking apples, peeled and chopped.
02 - ½ cup light brown sugar.
03 - 2 teaspoons ground cinnamon (heaping).
04 - 1 teaspoon ground ginger.
05 - 1 large egg (room temperature).
06 - ⅓ cup white granulated sugar.
07 - ¼ cup vegetable oil.
08 - ¼ cup full-fat sour cream (room temperature).
09 - 2 teaspoons vanilla extract.
10 - 1 cup all-purpose flour.
11 - 1 teaspoon baking soda.
12 - ½ teaspoon kosher salt.
13 - 1 cup powdered sugar, sifted.
14 - 1 teaspoon vanilla extract.
15 - 3 tablespoons milk.

# Instructions:

01 - Preheat oven to 350°F and prepare loaf pan with nonstick spray or cake release.
02 - In a medium bowl, mix apples, brown sugar, cinnamon, and ginger; set aside.
03 - In a large bowl, whisk egg, granulated sugar, oil, sour cream, and vanilla extract until combined.
04 - In a separate bowl, whisk flour, baking soda, and salt; add to wet ingredients and mix until nearly combined.
05 - Fold in ¾ of apple-cinnamon mixture, pour into prepared pan, and top with remaining apple mixture.
06 - Bake 50-55 minutes, until internal temperature is 200°F.
07 - Cool in pan for 30 minutes before serving.
08 - In a small bowl, whisk powdered sugar, vanilla, and milk until smooth. Adjust thickness with more powdered sugar if needed.
09 - Pour glaze over bread before serving.
