Tender zucchini cubes with Italian herbs and parmesan, air fried for a quick, flavorful dish.

# Ingredients:

→ Vegetables

01 - 3 medium zucchini, cubed (approximately 600 g or 4 cups)

→ Seasonings

02 - Spray olive oil
03 - 1 teaspoon Italian seasoning
04 - Salt, to taste
05 - Black pepper, to taste

→ Cheese

06 - 3 heaping tablespoons grated parmesan (about 25 g)

# Instructions:

01 - Cut the zucchini into small, even cubes.
02 - Lightly coat the zucchini cubes with spray olive oil, then season evenly with Italian seasoning, salt, and black pepper.
03 - Sprinkle grated parmesan over the seasoned zucchini and gently toss until the cheese is evenly distributed. Avoid overmixing.
04 - Preheat the air fryer to 200°C for 3 minutes.
05 - Insert a liner into the air fryer basket. Spread the zucchini mixture in a single, even layer and cook for 4 minutes. Carefully toss, then cook for an additional 4 to 5 minutes until the parmesan is golden and the zucchini is tender.
