# Ingredients:

01 - 3 medium russet potatoes.
02 - 1-2 tablespoons olive oil.
03 - Kosher salt to taste.
04 - 2 tablespoons butter, softened.
05 - 1/4 teaspoon black pepper.
06 - 1 teaspoon garlic powder.
07 - 1 teaspoon onion powder.
08 - 2 cups shredded cheddar cheese, divided.
09 - 1 cup sour cream.
10 - 2 slices bacon, cooked and crumbled (or 6 tablespoons bacon bits).
11 - Chopped green onions for garnish (optional).

# Instructions:

01 - Wash and dry the potatoes thoroughly. Brush each potato with olive oil, sprinkle with salt, and poke several times with a fork.
02 - Preheat the air fryer to 400°F (204°C) for at least 3 minutes.
03 - Place the potatoes in the air fryer basket and cook for 30 minutes, flipping halfway through. Check for tenderness by piercing with a toothpick or fork.
04 - Allow the potatoes to cool for 10 minutes or until easy to handle.
05 - Cut each potato in half lengthwise, and carefully scoop out the flesh, leaving a thin layer to keep the skin intact.
06 - In a large bowl, mash the scooped potato flesh using a masher or mixer.
07 - Add butter, pepper, garlic powder, onion powder, 1 1/2 cups cheddar cheese, and sour cream to the potatoes. Mix until smooth.
08 - Fill each potato shell with the mashed mixture. Top with remaining 1/2 cup cheddar cheese and crumbled bacon.
09 - Place stuffed potatoes back in the air fryer basket and cook for 5-7 minutes, or until cheese is melted and potatoes are heated through.
10 - Serve hot, garnished with green onions if desired.
