Wash and dry the potatoes thoroughly. Brush each potato with olive oil, sprinkle with salt, and poke several times with a fork.

Preheat the air fryer to 400°F (204°C) for at least 3 minutes.

Place the potatoes in the air fryer basket and cook for 30 minutes, flipping halfway through. Check for tenderness by piercing with a toothpick or fork.

Allow the potatoes to cool for 10 minutes or until easy to handle.

Cut each potato in half lengthwise, and carefully scoop out the flesh, leaving a thin layer to keep the skin intact.

In a large bowl, mash the scooped potato flesh using a masher or mixer.

Add butter, pepper, garlic powder, onion powder, 1 1/2 cups cheddar cheese, and sour cream to the potatoes. Mix until smooth.

Fill each potato shell with the mashed mixture. Top with remaining 1/2 cup cheddar cheese and crumbled bacon.

Place stuffed potatoes back in the air fryer basket and cook for 5-7 minutes, or until cheese is melted and potatoes are heated through.
