Cheesy Air Fryer Mushrooms (Print Version)

# Ingredients:

→ For the Mushrooms

01 - 12-15 cremini or button mushrooms
02 - 1 teaspoon olive oil
03 - 1/8 teaspoon salt
04 - 1/8 teaspoon crushed black pepper
05 - 1 teaspoon balsamic vinegar

→ For the Filling

06 - 1/4 cup bell pepper, chopped
07 - 1/4 cup onion, chopped
08 - 2 tablespoons cilantro, chopped
09 - 1 tablespoon jalapeno or green chili, finely chopped
10 - 1/3-1/2 cup grated mozzarella cheese
11 - 1 teaspoon ground coriander
12 - 1/4 teaspoon salt
13 - 1/4 teaspoon paprika or Kashmiri red chili

# Instructions:

01 - Gently wipe mushrooms with a damp cloth. Remove stems by pulling sideways, creating hollow caps.
02 - Toss mushroom caps with olive oil, salt, black pepper, and balsamic vinegar in a bowl. Set aside.
03 - Combine chopped peppers, onion, jalapeno, cilantro, shredded cheese, and spices in a bowl. Mix well.
04 - Using a small spoon, generously fill mushroom caps with the mixture, pressing down to pack the filling tightly.
05 - Place stuffed mushrooms in air fryer basket and cook at 320°F for 9-10 minutes, depending on mushroom size.
06 - Let mushrooms rest for 5 minutes before serving.

# Notes:

01 - Leftover filling can be used to make a vegetable-cheese frittata.
02 - Italian seasoning can be substituted for ground coriander if preferred.
