Place flour in one shallow bowl. In a second bowl, beat the egg with water. In a third bowl, mix panko, parmesan, smoked paprika, garlic powder, onion powder, and cayenne if using.

Dredge each pork piece in flour, dip in egg, then press into the panko mixture until evenly coated. Set the coated pieces on a plate or tray.

Preheat the air fryer to 400°F for 3-5 minutes. Lightly spray the basket with oil.

Arrange the pork bites in a single layer with space between them. Spray the tops with oil. Air fry for 8-10 minutes, flipping halfway through, until golden and the center reaches 145°F.
