Juicy pork chop cubes coated in seasoned panko and air fried until crisp, golden, and ready in about 25 minutes.

# Ingredients:

For the pork

01 - 1 1/2 lb (680 g) boneless pork chops, about 3/4 to 1 inch thick
02 - 1 teaspoon kosher salt
03 - 1/2 teaspoon black pepper

For the coating

04 - 1/3 cup (42 g) all-purpose flour
05 - 1 large egg
06 - 1 tablespoon water
07 - 1 cup (60 g) panko breadcrumbs
08 - 1/3 cup (30 g) finely grated parmesan cheese
09 - 1 teaspoon smoked paprika
10 - 1 teaspoon garlic powder
11 - 1/2 teaspoon onion powder
12 - 1/4 teaspoon cayenne pepper, optional
13 - Olive oil spray or avocado oil spray

For serving

14 - Honey mustard, ranch, barbecue sauce, or lemon wedges

# Instructions:

01 - Trim excess fat from the pork chops, pat them dry, and cut into 1-inch pieces. Season with salt and black pepper.
02 - Place flour in one shallow bowl. In a second bowl, beat the egg with water. In a third bowl, mix panko, parmesan, smoked paprika, garlic powder, onion powder, and cayenne if using.
03 - Dredge each pork piece in flour, dip in egg, then press into the panko mixture until evenly coated. Set the coated pieces on a plate or tray.
04 - Preheat the air fryer to 400°F for 3-5 minutes. Lightly spray the basket with oil.
05 - Arrange the pork bites in a single layer with space between them. Spray the tops with oil. Air fry for 8-10 minutes, flipping halfway through, until golden and the center reaches 145°F.
06 - Transfer the bites to a plate and rest for 3 minutes. Serve hot with honey mustard, ranch, barbecue sauce, or lemon wedges.

# Good to know:

01 - Cook in batches if the basket is crowded.
02 - Use an instant-read thermometer for the juiciest pork.
03 - Best served right after air frying.
