# Instructions:

01 - Bring a large pot of salted water to a boil. Add dried Chinese noodles and cook according to package instructions until al dente. Drain and set aside.
02 - Heat sesame oil in a large skillet or wok over medium heat. Add ground beef and cook, breaking it apart with a spatula, until evenly browned and fully cooked, approximately 5 to 7 minutes.
03 - In a bowl, combine soy sauce, rice vinegar, chili oil, chicken broth, tahini, and sugar. Whisk until smooth and homogenous.
04 - Add minced garlic, grated ginger, and white parts of the green onions to the beef in the skillet. Stir-fry for 1 minute until aromatic. Pour in the prepared sauce and simmer, stirring occasionally, until slightly thickened, about 3 to 4 minutes.
05 - Add cooked noodles to the skillet. Toss until evenly coated and heated through.
06 - Transfer noodles to serving bowls. Top with a drizzle of chili oil, green onion slices, and additional tahini or crushed peanuts if desired. Serve immediately while hot.

# Notes:

01 - For an extra layer of flavor and crunch, garnish with toasted peanuts or a small spoonful of Szechuan peppercorn for a numbing heat.
