Accordion Potatoes (Print Version)

# Ingredients:

01 - 4 large potatoes.
02 - ¼ cup butter, melted.
03 - 4 garlic cloves, minced.
04 - 2 tablespoons parsley, chopped.
05 - 1 teaspoon Italian seasoning.
06 - ¼ teaspoon ground black pepper.
07 - ½ teaspoon paprika.
08 - Salt to taste.

# Instructions:

01 - Heat oven to 400°F. Line baking sheet with parchment. Wash and peel potatoes.
02 - Cut potato ends, slice lengthwise into ½-inch rectangles. Soak in cold water.
03 - Place potato between skewers. Make vertical cuts, then diagonal on other side. Stretch to create accordion. Rinse and drain.
04 - Mix butter, garlic, herbs and spices. Brush on both sides of potatoes.
05 - Cook 30 minutes at 400°F, flipping halfway, until golden and crispy. Cool briefly before serving.

# Notes:

01 - Soaking removes starch for crispier results.
02 - Skewers prevent cutting all the way through.
03 - Cool briefly to maintain accordion shape.
