Heat oven to 400°F. Line baking sheet with parchment. Wash and peel potatoes.

Cut potato ends, slice lengthwise into ½-inch rectangles. Soak in cold water.

Place potato between skewers. Make vertical cuts, then diagonal on other side. Stretch to create accordion. Rinse and drain.

Mix butter, garlic, herbs and spices. Brush on both sides of potatoes.

Cook 30 minutes at 400°F, flipping halfway, until golden and crispy. Cool briefly before serving.
