Ultimate Curried Sausages (Print Version)

Ingredients:

01 - 0.5 tbsp oil.
02 - 600g / 1.2lb sausages, of choice.
03 - 2 garlic cloves, minced.
04 - 1 onion, halved and sliced.
05 - 1 carrot, peeled, sliced on the diagonal.
06 - 1 tbsp curry powder, or more.
07 - 3 tbsp flour, any type.
08 - 2 cups (500ml) chicken stock/broth, low sodium.
09 - 1 tsp sugar.
10 - 1/2 tsp salt, plus more to taste.
11 - 1/2 tsp black pepper.
12 - 1 cup peas, frozen.

Instructions:

01 - Heat oil in a large skillet over medium-high heat. Add sausages and cook, turning to brown on all sides. Once browned, remove sausages from the skillet. Optionally, slice the sausages into pieces on the diagonal for easier serving.
02 - In the same skillet, add minced garlic and sliced onion. Cook for about 2 minutes, or until the onion becomes translucent and fragrant.
03 - Sprinkle in the curry powder and stir for about 30 seconds to release the flavors. Add the flour and mix for another 30 seconds to create a roux.
04 - Gradually pour in the chicken stock while continuously mixing to avoid lumps. Once smooth, add the sliced carrots, sugar, salt, and pepper. Stir well to combine.
05 - Return the sausages to the skillet along with the frozen peas. Bring the mixture to a simmer and cook for about 3 minutes, or until the sauce has thickened and the sausages are fully cooked.
06 - Serve the curried sausages over mashed potato, rice, pasta, or noodles. For a low-carb option, try serving over mashed cauliflower.
