Ingredients:

01 - 1 pound breakfast sausage.
02 - 2 tablespoons butter.
03 - 1/4 cup all-purpose flour.
04 - 2 cups milk.
05 - Salt and pepper to taste.

Instructions:

01 - Preheat your oven to 425°F (220°C).
02 - In a large skillet, cook the breakfast sausage over medium heat until browned and cooked through. Remove from the skillet and set aside.

09 - While the tater tots are baking, fry the eggs to your desired doneness.
10 - To assemble the breakfast bowls, divide the tater tots among four serving bowls.
11 - Top each bowl with a portion of the sausage gravy, a fried egg, and shredded cheddar cheese.
12 - Garnish with chopped fresh chives, if desired, and serve hot.
