Dinner, Pasta, Mexican (Print Version)

Ingredients:

01 - 1 pound lean ground beef.
02 - 1 small yellow onion, diced.
03 - 1 packet taco seasoning (1 oz).
04 - 2 ½ cups chicken broth (beef broth or water can be used).
05 - 1 cup milk.
06 - 1 cup salsa (any flavor, more as desired).
07 - 1 small green bell pepper, diced.
08 - 8 ounces spaghetti.
09 - 1 cup Mexican cheese blend, shredded.
10 - Toppings as desired.

Instructions:

01 - In a 12-inch skillet, cook the ground beef and onion over medium-high heat until no pink remains while breaking up with a spoon. Drain any fat. Add the taco seasoning and cook for 1 minute more.
02 - Add the broth, milk, salsa, and bell pepper.
03 - Bring to a boil, add the spaghetti, and cover. Reduce the heat to medium low and let simmer covered, stirring occasionally, for 12-15 minutes or until the spaghetti is tender.
04 - Remove from the heat and let rest uncovered for 5 minutes.
05 - Add the cheese and stir until melted. Taste and season with additional salt and pepper or salsa if desired.
